Pyaaz Kachori
Introduction :
Pyaaz Kachori is a kind of Rajasthani Kachori, a fried pastry filled with a spicy onion filling. Pyaaz kachori is a very popular morning breakfast of large number of peoples of Rajasthan. It is a spicy snack food from Jodhpur. Every region of India has their own street food and every corner of the country specialize in unique dishes. One of the most popular Rajasthani street foods is the Kachori — this stuffed, deep-fried, crispy Indian bread resembles the flaky texture of puff pastry. These can be served as a starter for dinner parties with some green chutney and tamarind chutney.

2 cups plain flour [maida] | 2 onion [roughly chopped] |
1/4 cup gram flour [besan] | 1/2 tsp garam masala powder |
2 green chilli [finely chopped] | 1/4 tsp red chilli powder |
1 tsp garlic or ginger paste | 1/4 tsp turmeric |
1 tsp dry mango powder [aamchur] | 1/2 tsp coriander seeds [crushed] |
1/2 tsp cumin [jeera] | 1 pinch asafoetida [hing] |
1/2 tsp fennel [saunf] | 1 tsp nigella [kalonji] |
1/2 tsp sugar | Salt as required |
1 tbsp rava / suji | Water for knead |
2 tbsp oil | 2 tbsp ghee for dough |

How To Make Pyaaz Kachori :
Step 1 Prepare the dough for the kachori
Combine the maida, ghee and salt in a deep bowl and knead into a semi-soft dough using enough water. Knead well for 5 minute. Cover the dough with a wet muslin cloth and keep aside for 15 minutes.
Step 2 Saute the spices
Now, place a pan over medium flame and add oil. When the oil is hot enough, add garlic and ginger paste, asafoetida, cumin, fennel, nigella and sugar. Saute well and let the mixture turn cook. Next, add in the coriander seeds, chopped onions, chopped green chillies and salt as per your taste. Mix well all the ingredients.
Step 3 Prepare the filling
When onions turn slightly brown, add red chilli powder, turmeric, dried mango powder, gram flour, sugar and garam masala powder to this mixture. Mix well to ensure that all the ingredients are evenly coated. Once the oil separates in the pan, take it off the flame and let it cool.
Step 4 Prepare stuffed balls to prepare the kachoris
Now extract a small portion of the dough and make small dough balls. Roll out each portion of the dough into a 21/2 diameter circle. Place one portion of the onion filling in the centre. Bring together all sides, seal it tightly. Repeat the step with all the kachoris. Ensure that the stuffing doesn’t break out.
Step 5 Deep fry the kachoris and serve with chutneys
Heat the oil in a deep non-stick pan. Turn the heat to medium-low and deep-fry the kachoris till golden. Drain on an absorbent paper and keep aside. Serve these hot with tamarind and green chutney to enjoy.
