Mirchi Bada
Introduction :-
The Mirchi Bada of Jodhpur, Rajasthan is famous, as the water in that region lends it a unique taste. Rajasthani Mirchi Bada are made with the large light green variety of green chillies which are less spicy and tastes amazing. Mirchi Bada is a spicy Indian snack consisting of chili and potato or cauliflower stuffing battered and fried, served hot with tomato sauce or occasionally with mint and tamarind chutney. Another snack delight from Rajasthan, Mirchi Bada are perfect answers to complement evening tea or morning breakfast.
Ingredients :-
2 potatoes boiled and mashed | 1 tsp cumin powder [jeera] |
1/2 tsp red chili powder for filling | 1/2 tsp dry mango powder [amchur] |
1 tsp garam masala | 1 tsp fennel seeds [saunf] |
1 tsp coriander powder | 2 tsp tamarind paste |
A pinch of Chaat Masala | 3/4 cup chickpea flour [besan] |
1/4 tsp Baking Soda | A pinch of asafoetida [hing] |
1/4 cup rice flour | 10 long green chillies |
1/4 tsp carom seeds | 1/2 tsp red chili powder |
Salt to taste | Oil for deep frying |

How To Make Mirchi Bada :-
- In a large mixing bowl take 2 boiled and mashed potato.
- Add amchur, red chilli powder, fennel, coriander powder, tamarind paste, cumin powder, asafoetida, garam masala, chaat masala and salt and mix well.
- Combine the chickpea flour, rice flour, salt, red chilli powder and baking soda in a mixing bowl. Add carom seeds too. Make a smooth and little thick batter by adding water little by little.
- Wash the chillies and wipe them with a cloth. Slit the chillies lengthwise and remove seeds. Stuff them with prepared potato filling.
- Heat oil in a pan for deep frying.
- Dip the stuffed chilies in the prepared batter and deep fry until golden and crispy.
- Remove the fried badas from oil and place them on a kitchen paper.
- Finally, enjoy mirchi bada recipe with green chutney and tamarind chutney.
