Pukhlein-Meghalaya Delight

Origin :-

Pukhlein is a popular deep fried rice flour snack in Meghalaya. Interestingly this Pukhlein tastes similar to our Kerala delicacy Nei Appam or Tamil Nadu’s Athirasam. Pukhlein made with very few ingredients, it can be prepared in a jiffy and tastes awesome. Making this sweet recipe is extremely easy and this dish will surely be a hit in your household. Breads are known for their fluffy texture and lightness that can be paired with almost any dish and that is why they are preferred by all. Pair this scrumptious dish with a hot pipping cup of tea and endless conversations with your loved ones.

Ingredients :-

For 8 serving
1 cup rice flour1 cup cane sugar [jaggery]
2 cup oilWater as required

Directions :-

  • In a saucepan dissolve jaggery with water and cook to a thick syrup.
  • Once the syrup is thick, add rice flour and mix simultaneously.
  • Mix till it forms the non stick mass. Remove from heat
  • Now heat the oil in a another pan for deep frying on medium flame.
  • Add spoonful of the batter in the oil. Fry the bread until you get a nice golden brown color.
  • Transfer them on to a kitchen towel to absorb excess oil.
  • Enjoy this tasty and crispy pukhlein with hot tea.
