Bebinca
History :
Bebinca also known as bibik or bebinka, is a traditional cake of Goa, India. Traditionally, It is especially popular during Christmas, but is available in Goa year round due to tourist demand. It is also easily available to carry and preserve for a long time or eaten fresh. It is a type of layered pudding that is usually layered with two different colors of coconut milk and maida batter. A traditional bebinca has seven layers.
Ingredients :
300 ml Coconut milk | 10 Egg yolks |
200 gram All-purpose flour (maida) | 4 tbsp Sugar |
1/2 tbsp Nutmeg powder | 1/4 cup Clarified butter (ghee) or, unsalted butter |
How to make bebinca :
- Take a mixing vessel, combine coconut milk, flour, sugar, nutmeg and the egg yolks and make a batter.
- Preheat the oven to 180°C for 10 mins. Now spread some ghee/butter over it with the help of brush.
- Bake till golden brown. Again spread ghee/butter.
- Continue greasing and baking with batter until all batter is finished. Bake each layer for 15 mins.
- Once the last layer is over, allow it cool it outside for few mins, flip it over and cut into slices before serving.
- Serve warm or cold with a dollop of ice-cream.
