Mawa Kachori – Jodhpuri Style
History & Origin
A Rajasthani snack made of mawa or evaporated milk solids, Mawa Kachori is one of the most popular sweet treats one can find in the state. The crispy kachoris stuffed with delicious dry fruits and mawa stuffing make your mouth full of water. Mawa kachori is a delightful snack which you can enjoy any time when you wish to eat something sweet.
Ingredients
Refined flour 2 cup | Green cardamom powered 1 tbsp |
Mawa 1 cup | Sugar 1 cup |
Powered sugar 1/2 cup | Almonds 2 tbsp |
Cashew nuts 2 tbsp | Pistachios 1 tbsp |
Saffron 15 to 20 thread | Ghee 1/4 cup |
Ghee for frying | 700 ml water |
Method
Mawa Kachori For Dough :
- Make a dough add refined flour and ghee and mix it well then add water to it and knead a soft and smooth dough.
- Keep aside for 30 minutes.
For Filling :
- We have take mawa. Crumble it a little and add to the wok. Roast the mawa on medium-low flame while stirring constantly until there is slight change in the color. There is now slight change in the color and also ghee has started releasing from it and also it has turned fragrant. Mawa is roasted well, turn off the flame.
- Now, transfer this mawa mixture in a bowl and let it cool. Then add powdered sugar and cardamom powder and mix it well.
For Sugar Syrup :
- For this, add sugar to the vessel. We have take sugar and to it add water. Turn on the flame and let it simmer until sugar dissolves completely.
- Then cook it to form syrup of one string consistency.
To Make Kachori :
- Heat oil in a pan.
- Knead the dough a little more and make small lumps from it.
- Take a small sized ball from dough and roll into a flat circle. Now add 1 to 2 tsp stuffing over it.
- Press down the stuffing a little and lift the dough from all slides to close it. Make sure kachoris doesn’t crack from any side.
- Check if the ghee is rightly hot. Put a small chunk of dough into the ghee. It is gradually roasting. We need less heated oil for frying the kachoris and also keep the flame low.
- Now, deep fry these kachoris in the heated oil till it turns golden brown then drain it on absorbent paper.
- After that drop these kachoris to the sugar syrup and keep them drenched in to it for 2 to 3 minutes.
- Garnish it with pistachio, almonds, and saffron.
- Serve it hot.
