Eggplant with Garlic sauce for Chinese lovers

History:

A vegan Chinese recipe was introduced by a farmer in china as he was growing eggplant in his farms. Eggplant with Garlic sauce is a very easy recipe for someone who is a great lover of Chinese food.

Ingredients :

3 Chinese Eggplant2 tsp olive oil
1 tsp finely chopped garlic3 tsp red pepper flakes (crushed)
1 tsp finely chopped gingersalt as per taste
2 tsp sugar1 tsp cornstarch
2 tsp light soy sauce2 tsp oyster sauce
1 cup water1 /2 cup chopped spring onions

Method:

  1. Cut the eggplant in trainguar shapes about a inch thick.
  2. Put the pieces of Eggplant in salted water for about 15 minutes.
  3. Drain the water and rinse and pat dry with some clean towel.
  4. In a bowl add corn starch with egg plant.
  5. Put some oil in a pan.
  6. Place the coated eggplant in oil and deep fry them.
  7. Keep the fried eggplant aside now lets prepare the sauce.
  8. In some other pan stir fry ginger garlic and chillies .
  9. In a bowl add soya sauce ,oyster sauce lil bit of sugar mix well so that sugar gets fully dissolved.
  10. Pour this souce mixture to the pan having ginger ,garlic and chillies & add some water.
  11. Now finally its time to add eggplant to this sauce.
  12. Make sure sauce evenly covers the egg plant pieces.
  13. Cook until sauce thiknes.
  14. Garnish with some chopped spring onions .
  15. Serve hot with noodles ,brown rice or even with quinoa it tastes superb.
