Nimki – Crisp Bengali Snack
Origin :
Nimki is an all time favorite Bengali snack, which has a appetizing flavor & extremely interesting mouth-feel. It feels very different when you bite into a Nimki. It is an ideal evening deep fried snack and can be enjoyed with cup of tea. Its is a savory cracker, that is packed with flavors. A crisp snack bursting with the distinct flavor of kalonji. It serves best with sweets in the time of Bijoy Dashami /Dussehra, after immersion of Goddess Durga in holy river. One snack that you will always find at my home is Nimki or as we also call it Parti Mathri.
Ingredient :
For 4 servings : | |
3-4 cups plain flour / maida | 3 tbsp ghee / clarified butter |
1 tsp cumin seeds / jeera | 1 tbsp nigella seeds / kalonji |
1 tbsp carom seeds / ajwain | 1 tbsp salt |
Water to knead | |
Other ingredients : | |
1 tbsp ghee | 1 tbsp plain flour |
Oil for deep frying |
How to make nimki :
- Firstly, in a large bowl take Maida.
- Combine the cumin, carom, nigella, salt, ghee, crumble and mix well.
- Knead into a semi-stiff dough using enough water.
- Cover with a lid & keep aside for 20 min.
- Pinch a large ball sized dough and dust with Maida.
- Knead the dough again and using a rolling pin roll slightly thin.
- Now rub 1 tbsp. ghee over the rolled dough and sprinkle 1 tbsp. Maida and spread uniformly.
- Start rolling tightly from one end to another end.
- Cut into equal pieces using a sharp knife.
- Press slightly and dust with Maida and roll to a circle shape.
- And prick using a fork.
- Fold into half to form a semi-circle and fold again to form a triangle and press the 2 corners lightly using your index finger.
- Prick with a fork to prevent from puffing up while frying.
- Now deep fry in medium hot oil on a slow medium flame till they turn golden brown in color from both the sides.
- Drain on an absorbent paper.
- Cool completely and enjoy Nimki as an evening tea time snack or store in an airtight container for at least 2 weeks.
