Barnyard Millet Salad – Navratri Special
Introduction
The barnyard millet salad its salad form can be a refreshing meal that is very easy to digest and supplies your body with a host of nutrients. Barnyard millet cooks fast. It is rather bland in taste, which means you can turn it into a yummy treat by adding veggies of your choice, like carrots, green peas, capsicum or cucumber. The salad is full of flavours and health, designed in reverence to your body and respect for our deities.
Ingredients
Servings-6 | |
1/2 cup sama rice | 3/4 cup finely chopped cucumber |
1/2 cup finely chopped red & yellow capsicum | 1 small finely chopped carrot |
2 tbsp boiled green peas | 3 tbsp lemon juice |
2 cups water | 1/4 tsp crushed black pepper |
Rock salt to taste |
Preparation
- Wash and soak the sawa rice in a cup of water for around 10-15 mins.
- Then take water and boil in a pan. Add soaked sawa rice to it.
- Mix salt, cover and cook and simmer until the rice is well cooked. Keep stirring occasionally to ensure the rice don’t stick to the pan’s bottom.
- Once cooked, turn off the flame and drain excess water.
- Transfer the cooked rice to a bowl to cool down.
- In a large bowl, add the cooked rice along with veggies. Drizzle lime juice , add crushed black pepper and toss everything well.
- Serve a delicious and healthy barnyard millet vegetable salad.
Health Fact
Fair source of protein, easy on our digestion and a low glycaemic index food, so should work well for those with diabetes as well.
