Bhapa Doi – Steamed Yogurt Bengali Pudding

Story behind Bhapa Doi

Bhapa Doi is a popular Bengali Sweet made with hung curd. Doi means “curd” and Bhapa means “steamed or baked”. The dessert consists of steamed yogurt served chilled. Adding nuts or fresh fruit to Bhapa doi will boost its flavor.

Ingredients

Milk – 1 liter full fat milkJaggery – 3/4 – 1 cup
Nuts – Almond, Pistachio, Cashew, Raisins, dates

Method

  1. Prepare homemade curd with 1/2 liter of full fat or toned milk.
  2. To make hung curd, put the homemade curd in a muslin cloth and let the water drain out from it. Refrigerate it so that it doesn’t get sour.
  3. Add 1/2 liter of milk in a pan and boil it until it’s half in quantity. Keep stirring so that it doesn’t get burnt.
  4. Once the milk is reduced to half, switch off the stove and cool it till the time it turns lukewarm.
  5. In another bowl, add hung curd and lukewarm milk and mix well.
  6. Add powdered jaggery (3/4th – 1 cup as per taste). Sieve jaggery before adding so that there are no lumps.
  7. Keeping mixing until jaggery dissolves.
  8. Put it on a steamer. Tap lightly to remove air bubbles.
  9. Sprinkle pistachios or other nuts of your choice.
  10. Steam cook the prepared mix for 15-20 minutes in a steamer over boiling water, on a plate/stand, covered.
  11. Once steamed, remove the steam, and let it cool completely. Keep it in a refrigerator overnight.
  12. Bhapa Doi is best served chilled topped with nuts and jaggery powder. You’ll enjoy it!
