Bhutte ki Dal/Corn Curry.
Origin :
Bhutte ki dal or corn curry is an authentic dish of Rajasthan. Traditionally this recipe is prepared with Indian corn or what we call ‘Desi Bhutta’ but these days we rarely find desi corn everywhere so we can make this recipe with American corn also. This recipe of Rajasthan is getting lost as we are moving towards newly invented recipes of corn like corn chat, corn pakoras, etc. This is a very easily made recipe so you can try the recipe as an add-on to a proper Indian thali menu.
Ingredients:
4 Corn medium size (take fresh & soft ) | 2 green chilies ( chopped) |
1.5 tsp besan(Gram flour) | 1/2 tsp turmeric powder |
1 small onion (finely chopped) | 1 tsp ginger garlic paste |
2 Tomato( finely chopped) | 1/2 tsp coriander powder |
1 tsp cumin seeds | 1/2 tsp red chili powder |
1/4 tsp Hing(asafoetida) | 1/2 tsp sugar |
1 tsp lime juice | 1/2 cup ghee |
salt to taste | 1 tsp garam masala |
Chopped coriander leaves | 2-3 Red chilies whole |
4 cups water |
Method:
- Peel the corns & wash them properly.
- Grate the corns so that all seeds come out properly .
- In a bowl take besan and start mixing little bit of water so that the mixture becomes lumps free.
- Take a kadhai put some ghee (take half of the ghee as we will need half for tempering).
- Put cumin seeds,onion ,green chillies, ginger garlic paste suate it well.
- Now add tomatoes and mix well.
- Put all the spices : red chilli powder,turmeric powder ,corinder powder and salt mix well.
- Add grated corn.
- After few seconds add besan mixture prepared earlier.
- Mix well as besan has the tendency to form lumps.
- Add garam masala ,and pinch of sugar.
- Adjust the water keeping in mind that dal will thicken later.
- Now in another pan add rest of the ghee, some cumin seeds ,hing and red chillies and add this tempering to the dal.
- Before serving add some lemon juice and garnish with coriander leaves.
- Serve hot with chappati ,rice or nan.
