Cauliflower Alfredo
Introduction
Cauliflower alfredo is the deliciously healthy pasta. Full of natural fiber and a variety of essential nutrients, cauliflower is also a strong source of bone-strengthening vitamin K. Cauliflower is one of several vegetables in the species. Cauliflower Alfredo sauce is a creamy vegan, gluten-free, nut-free homemade Alfredo sauce with less fat & less calories as compared with the original recipe. It only has 25 calories per cup, but 3 grams of fiber and with all kinds of nutrients and vitamins! Add to that the fact that cauliflower is like 90% water, and you can see why it can actually help with weight loss.
Ingredients
Servings : 6 | |
6 cups cauliflower florets | 6 large cloves garlic |
2 tbsp olive oil | 1/2 cup plant-based milk |
1 1/4 tsp salt | 1/2 teaspoon white pepper or black pepper |
2 cups boiled fettuccine or other pasta of choice | 6 cups water |
Method
Step 1 – Bring a large pot of boiling water to a boil.
Step 2 – Add the cauliflower and cook, covered, for 8 mins or until cauliflower is soft.
Step 3 – Heat the olive oil a large skillet over medium heat, saute the minced garlic until soft and fragrant, but not browned, about 1-2 minutes.
Step 4 – Use a slotted spoon, add the cooked cauliflower to a blender.
Step 5 – Add the milk, salt, and pepper and blend until smooth.
Step 6 – Toss the cooked pasta with cauliflower alfredo.
Step 7 – Cauliflower alfredo is ready. Enjoy!!
