Cauliflower pizza with zucchini pesto

Origin:

The word Cauliflower originated from the Italian word cavolfiore, meaning “cabbage flower”.

Cauliflower Pizza is a great substitute for original pizza as it is low in carbs and high in proteins. It does not need any flour hence it’s a Gluten-free pizza, crust of the pizza is made of finely minced cauliflower with egg, salt, cheese, and herbs of your choice. Cauliflower pizza is that much healthy that a lady named Gail Becker invented a company “CAULIPOWER” selling gluten-free plant-based(cauliflower) pizza crust, she invented this company after doing a lot of research on gluten-free recipes as both of her sons were diagnosed with celiac disease.

Ingredients :

1 medium-sized cauliflower (wash & separate the florets)2 whole eggs beaten
1/2 cup mozzarella cheese (grated)1/2 cup Parmesan cheese(grated)
1 tsp dried oregano1 tsp Dried basil leaves
1/2 tsp Red Chilli flakes1 tsp Garlic powder
1/2 tsp onion powder1/4 cup sundried tomatoes
1 small red onion, thinly sliced into rounds2 tsp olive oil
1 zucchini (chopped )1/2 cup almonds
1 cup basil leaves1 lemon (zest)
salt to taste 1 tsp pepper
few garlic cloves1/2 cup marinara sauce

Preparation:

  1. Grind the florets of cauliflower in the food processor & pulse into the fine crumbs (it will look like rice).
  2. Put the cauliflower mixture into the muslin cloth & remove the execss liquid.
  3. Transfer into the mixing bowl ,add eggs and parmesan ,pepper ,salt ,garlic powder ,onion powder and stir well to mix.
  4. Preheat oven to 220°C.
  5. Grease the baking trays and line with baking paper.
  6. Add the prepared cauliflower mixture and spread evenly like pizza dough.
  7. Roast for 30 min. until golden brown.
  8. Meanwhile Prepare the zuchini pesto by putting zuchhini ,almonds, basil leaves ,garlic cloves ,lemon zest ,salt in a mixer grinder make a smooth paste by adding little water.
  9. Remove the cauliflower crust from microwave.
  10. Spread the marinara sauce, zucchini pesto, sun dried tomatoes,red onions & mozzarella cheese over the cauliflower crust.
  11. Place the Cauliflower Pizza crust back into the oven and bake again for about 10 minutes or until cheese melts evenly. 
  12. Remove it from the oven ,sprinkle some oregano,basil leave ,cut into pieces and serve it with pesto and sause as a evening snack or dinner.

Nutrition :

Cauliflower is an excellent source of Vitamin C and K. It is rich in dietary fiber and loaded omega 3 fatty acids. It is a Gluten-free low-carb recipe.
