Chikki from Lonavala, Maharashtra

Origin

In the Marathi language, the word ‘Lonavala’ means caves, as many of the rockcut caves in the area are called ‘Lenya’. The first Chikki was brought to Lonavala by Shri Maganlal Agarwal over 125 years ago. Since Gurdana is rich in iron and protein, the laborers used it as an energy source for the immediate boost in their energy, later this simple gurdana became groundnut chikki. Chikki is made with simple ingredients like sugar, jaggery, and nuts. It is a nutritious yet delicious Marathi Recipe.

Ingredients

1+1/2 cups mixed nuts (chopped coarsely)Baking soda, 1 teaspoon
Sugar/ Jaggery, 1 cupGhee, 2 tbsp

Method

  1. Using a heavy-bottomed pan, spread 1 tbsp. of ghee evenly and sprinkle sugar/jaggery over it (to help create an even caramelization). Meanwhile, put the remaining ghee on the wooden board and rolling pin.
  2. Place the pan on a slow flame and allow the sugar/ Jaggery to melt and caramelize. As soon as the sugar/ Jaggery turns brown or is cooked, add the baking soda and remove it from the fire immediately.
  3. Drop the broken nuts and stir. After transferring the mixture to the greased board, use a rolling pin to press it.
  4. Allow to cool, then cut into squares while it is still warm. Break Chikki into squares once it is completely cooled.
  5. Make sure the box is airtight.
