Eggplant with Garlic sauce for Chinese lovers
History:
A vegan Chinese recipe was introduced by a farmer in china as he was growing eggplant in his farms. Eggplant with Garlic sauce is a very easy recipe for someone who is a great lover of Chinese food.
Ingredients :
3 Chinese Eggplant | 2 tsp olive oil |
1 tsp finely chopped garlic | 3 tsp red pepper flakes (crushed) |
1 tsp finely chopped ginger | salt as per taste |
2 tsp sugar | 1 tsp cornstarch |
2 tsp light soy sauce | 2 tsp oyster sauce |
1 cup water | 1 /2 cup chopped spring onions |
Method:
- Cut the eggplant in trainguar shapes about a inch thick.
- Put the pieces of Eggplant in salted water for about 15 minutes.
- Drain the water and rinse and pat dry with some clean towel.
- In a bowl add corn starch with egg plant.
- Put some oil in a pan.
- Place the coated eggplant in oil and deep fry them.
- Keep the fried eggplant aside now lets prepare the sauce.
- In some other pan stir fry ginger garlic and chillies .
- In a bowl add soya sauce ,oyster sauce lil bit of sugar mix well so that sugar gets fully dissolved.
- Pour this souce mixture to the pan having ginger ,garlic and chillies & add some water.
- Now finally its time to add eggplant to this sauce.
- Make sure sauce evenly covers the egg plant pieces.
- Cook until sauce thiknes.
- Garnish with some chopped spring onions .
- Serve hot with noodles ,brown rice or even with quinoa it tastes superb.
