Handvo from Gujarat
Origin :-
Handvo is a vegetable cake originating from Gujarat. It is a part of the Gujarati cuisine. A healthy and tasty mixed lentil vegetable cake from the popular Gujarat. Handvo is a staple Gujarati snack made in many Gujarati homes. It is a delicious snack made with readymade idli batter reinforced with loads of tasty, juicy, crunchy veggies. Handvo is a prepared in an earthen pot and cooked over low flame.
Ingredients :-
1 cup rice | Split Pigeon Pea [toor dal]: 1/2 cup |
Split green gram skinless [dhuli moong dal]: 2 tbsp | Bengal gram Split [chana dal]: 1/2 cup |
2 tbsp whole black gram [sabut urad dal] | Yogurt [curd]: 1/2 cup |
Grated cabbage: 1/2 cup | Chopped or Grated bottle gourd [lauki]: 1/2 cup |
Shredded carrot: 1/2 cup | Green peas: 1/2 cup |
3 tbsp chopped coriander leaves | 2 green chilies finely chopped |
1/2 tsp ginger paste | sugar: 1/2 tsp |
2 tsp oil | Salt to taste |
1/4 tsp turmeric [haldi] | 1/2 tsp fruit salt (eno) or baking powder |
1 tsp lemon juice | 3 tsp oil for cooking |
1 tsp sesame [til] | 3/4 tsp mustard seeds |
1/2 tsp cumin [jeera] | 10 curry leaves |
A pinch of asafoetida [hing] | 2 cups of water |
How To Make Handvo :-
- Soak the rice with all the dals in water for 4 hours.
- Add curd and blend to a smooth but slightly coarse paste.
- Take the batter in a mixing bowl. Add all vegetables and also add the ginger paste, coriander leaves, green chili, turmeric, salt & sugar. Mix very well.
- At the time of preparing handvo, add fruit salt and lemon juice. It will react with the batter. Mix very well again.
- Further add oil and mix well. Now the batter is ready.
- Heat oil in a cast iron pan .
- Once the oil is hot add mustard, cumin, sesame, curry leaves and pinch of asafoetida.
- Sauté and splutter the tempering. Also spread the tempering uniformly over tawa.
- Pour 3/4 cup batter into a round. Cook in medium flame for 5-6 minutes by covering the pan.
- Flip over gently making sure the bottom layer has turned crisp. Cover and simmer for another 5 minutes.
- Handvo is done once the top turns golden and edges turn crispy. Finish off the remaining batter same way.
- Serve hot after slicing into wedges.
