The Story Behind Idiyappam

Idiyappam also known as Nool Puttu are string hoppers. Idiyappam is an authentic and traditional South Indian noodles recipe made with rice flour in a traditional steam cooker. It basically hails from the Kerala cuisine of South India, but is hugely popular across India and are mainly served for morning breakfast. Serve it with sweet coconut milk and stew and it makes for a fantastic breakfast or dinner.

Ingredients

1 cup rice flour or 130 grams rice flour
Half tsp of salt or add as required
2 cups of streaming water
1 tsp of grease oil

Method/ preparation

  1. Firstly, you take a pan and add rice flour to the pan.
  2. Roast the rice flour on medium flame until the flour is very hot to the touch. Remove and set aside.
  3. Take a saucepan add some water, salt and oil. Get the water to a boil.
  4. Now add in the roasted rice flour and mix well to combine. Start to knead the dough for 5-10 minutes.
  5. Make a smooth non-sticky dough. if the dough is too soft, then idiyappam will turn sticky once steamed. and if the dough is too hard, it will be difficult to press.
  6. Prepare small oblong balls and load it in the idiyappam press. Press the idiyappam strings onto idli plates.
  7. Place it into a steamer and steam for 7 to 10 minutes. After 10 minutes of steaming, rest the idli plates for 5 minutes before removing the idiyappam.
