Kashmiri Lahabi Kabab
History :
“Wazwan” the Kashmiri cuisine is not only famous in Kashmir but served internationally also in major Kashmiri food festivals.This Kashmiri cuisine is known for a variety of dishes of chicken and mutton and one of the major dishes from that cuisine is “Lahabi kabab” which is a very delicious recipe of kabab made from minced mutton dipped in yogurt and tomato curry.
Ingredients:
for kabab | |
500 gms minced mutton | 2 eggs |
1 onion | 1/2 tsp ginger paste |
1 tsp garlic paste | 2 green chilies finely chopped |
mint few leaves | 1 tsp garam masala |
salt as per taste | 1 tsp nutmeg powder |
oil for frying | |
for curry | |
boiled tomatoes 500gms | 1/ 2 cup yogurt |
1 tsp ginger paste | 1 tsp garlic paste |
1/2tsp fennel powder | 1 onion |
1/2 tsp coriander poweder | 4 tsp Kashmiri red chilies |
salt as per taste | oil as required |
Method :
For Kabab :
- Wash the minced mutton nicely and put it in a strainer so that all water drains out.
- Now in a grinder grind minced mutton with half onion,ginger garlic paste,eggs,nutmeg powder, garam masala to a coarse paste.
- Add finely chopped onions and green chillies,mint leaves,salt and mix well.
- Now start making kabab out of the mixture(any shape you like oval or round)and keep them aside .
- Now in a pan heat the oil and start deep frying the kababs so that they cooked completely and take them out in a kitchen napkin.
For Curry:
- In a blender blend onion,tomotoes,ginger garlic paste,red chiilies,coriander powder.
- In a pan heat some oil put the above mixture and fry untill oil starts floating.
- Add yogurt and fennel powder.
- Put salt and keep stirring.
- Adjust the consistency as per your choice by adding water.
- Boil it for few minutes and simmer down the flame.
- Now switch of the flame and put the kababs one by one slowly into the cury.
- Garnish it with coriander and slit ginger and green chillies.
- Serve it hot with kashmiri pulao or white rice.
- Enjoy.
