Kashmiri Lahabi Kabab

History :

“Wazwan” the Kashmiri cuisine is not only famous in Kashmir but served internationally also in major Kashmiri food festivals.This Kashmiri cuisine is known for a variety of dishes of chicken and mutton and one of the major dishes from that cuisine is “Lahabi kabab” which is a very delicious recipe of kabab made from minced mutton dipped in yogurt and tomato curry.

Ingredients:

for kabab
500 gms minced mutton 2 eggs
1 onion1/2 tsp ginger paste
1 tsp garlic paste2 green chilies finely chopped
mint few leaves1 tsp garam masala
salt as per taste1 tsp nutmeg powder
oil for frying
for curry
boiled tomatoes 500gms1/ 2 cup yogurt
1 tsp ginger paste 1 tsp garlic paste
1/2tsp fennel powder1 onion
1/2 tsp coriander poweder4 tsp Kashmiri red chilies
salt as per tasteoil as required

Method :

For Kabab :

  1. Wash the minced mutton nicely and put it in a strainer so that all water drains out.
  2. Now in a grinder grind minced mutton with half onion,ginger garlic paste,eggs,nutmeg powder, garam masala to a coarse paste.
  3. Add finely chopped onions and green chillies,mint leaves,salt and mix well.
  4. Now start making kabab out of the mixture(any shape you like oval or round)and keep them aside .
  5. Now in a pan heat the oil and start deep frying the kababs so that they cooked completely and take them out in a kitchen napkin.

For Curry:

  1. In a blender blend onion,tomotoes,ginger garlic paste,red chiilies,coriander powder.
  2. In a pan heat some oil put the above mixture and fry untill oil starts floating.
  3. Add yogurt and fennel powder.
  4. Put salt and keep stirring.
  5. Adjust the consistency as per your choice by adding water.
  6. Boil it for few minutes and simmer down the flame.
  7. Now switch of the flame and put the kababs one by one slowly into the cury.
  8. Garnish it with coriander and slit ginger and green chillies.
  9. Serve it hot with kashmiri pulao or white rice.
  10. Enjoy.
