Kerala’s Irachi Ishtu.
Irachi Ishtu is an authentic Keralan stew made with any meat like Mutton or Chicken. Here the term “Ishtu” is derived from “Stew” which basically means slowly cooked food which finally results in soup-like texture. This dish mainly contains Chicken and coconut milk and some authentic spices like cardamom and cloves.Irachi stew with appams is the traditional breakfast item mostly served in Kerala. Here is the recipe of Irachi Ishtu made with chicken.
Ingredients :
Chicken boneless (300gms ) | 2 tsp ginger garlic paste |
1 big onion sliced | 1 tsp mustard seeds |
3 cloves | 1-2 Cardamom |
1 cup chopped vegetables (beans, carrots, peas) | 1/2 cup coconut milk |
1/2 cashew -almonds paste | 2 green chilies slit |
1/2 tsp pepper powder | Few curry leaves |
Red chili ( Coarsely crushed) | Coriander leaves |
Coconut oil | water |
Salt as per taste | Garam Masala |
Method :
- In a pan heat oil, put mustard seeds let them crackle well.
- Now add cloves,cardamom, curry leaves ,onions ,ginger garlic paste,green chillies saute them for few seconds.
- Add chicken ,crushed red chillies, pepper mix well.
- Now add chopped vegetables ,add some water and cover the lid till chicken and vegetables bcomes soft.
- Keep stirring in between and cook the chicken in slow flame until it is cooked completely.
- After some time add cocnut milk and cashew almonds paste.
- Add salt to taste and garam masala switch off the flame.
- Mix well.
- Garnish with coriander leaves.
- Serve hot with appam or any bread of your choice.
