kachori is a winter delicacy of Gujarat. It is very popular in Gujarat and is made up of tuvar dana known as green pigeon peas. It is very fondly eaten in winters or in the monsoon. Tuvar beans are called Lilwa in Gujarat hence the name Lilwa kachori. Fresh Lilwa is available in winters so there are many ways in which we can include them in our diet like stuffed Lilwa parantha, you can also make pulao out of it or a simple sabzi, but this Lilwa Kachori is one of the yummiest recipes of Lilwa that can be made by stuffing the kachori with Lilwa mixture. The outer covering i.e kachori can be made with all-purpose flour.

Ingredients :

1 cup fresh Tuvar (Green pigeon peas)1 cup fresh green peas
2 cup all-purpose flour1/4 tsp Hing
pinch of turmeric1/2 tsp chopped ginger
1 tsp chopped green chilies1/4 cup chopped coriander
1 tsp lemon juice1/2 tsp sugar
salt as per taste2 tsp ghee
oil for frying

Method :

  1. Combine the tuvar and peas in grinder and blend them well.
  2. In a pan heat some oil add hing,turmeric,ginger,chillies and saute them on medium flame.
  3. Now add the blended tuvar mixture,mix well .
  4. Mix coriander,lemon juice,sugar,salt mix well ,and cook on a medium flame.
  5. Now for kachoris in a mixing bowl take flour,add some ghee salt & kneed well using some water and keep aside to rest.
  6. Now start taking some portion of the dough,roll it and put some tuvar mixture in centre.
  7. Bring all corners to centre with the help of your hands seak it at the centre.
  8. Do it with rest of the dough,when all the kachoris are ready ,deep fry them in a kadhai.
  9. Your deilicious Lilwa kachoris are ready.
  10. Serve them with chutney of your choice.
