Chilaquiles Mexican Breakfast
Story Behind Chilaquiles:
Mexican Chilaquiles are an authentic Mexican meal that originated in 1898 and is still eaten by many families today. A Mexican Chilaquiles is a fried tortilla strip that is steamed in sauce or mole to soften it. There are many ways to prepare it, but it is commonly served for breakfast or brunch.

Preparation
- Add tomatoes in a pan and cover it with a lid to cook fast.
- Move the tomatoes frequently.
- Once the tomatoes are at room temperature, peel the skin off.
- Chop 3-4 green onions.
- In another pan, add some oil, chopped onions and also tortilla chips on low medium heat.
- In a blender, add tomatoes along with some oregano, salt and pepper and a little water and blend it.
- Add the blended tomatoes mix into the pan with onions and tortilla chips.
- Now to this, add cheese and heat it for 10 minutes on low flame.
- Sprinkle some more cheese and Chilaquiles are ready.
- Serve it with sour cream.
