Modur Pulao-Kashmiri Style

Introduction :-

Modur Pulao is a Kashmiri Sweet Pulao prepared using dry fruits and nuts. It is a flavorful concoction of spices and nuts. Modur Pulao is a delicious and aromatic recipe that leaves you craving for more. It is considered to be a delicious aromatic rice preparation using a surplus amount of ghee. You can serve this flavour packed rice along with paneer masala gravy to make a complete meal. For rice lovers, this Kashmiri Food is a must-try Kashmiri delicacy.

Ingredients :-

1 cup long grain basmati rice1/2 cup ghee
1 cup sugar6 cloves [laung]
3 bay leaves [tej patta]6 green cinnamon [elaichi]
1 inch cinnamon stick [dalchini]1/2 tsp black peppercorns
¼ tsp saffron strandsSalt as required
1/4 cup blanched almonds, cashews, raisins, chopped dates & dry coconut silverWater as required

Method :-

  1. Wash rice thoroughly with water and soak for half an hour. Drain the water and set aside.
  2. Take a large pan and boil the water in it. Put rice in it and let it cook.
  3. When cooked (3/4th prepared), drain the rice and set it aside.
  4. In a small bowl, soak saffron with a tbsp of water.
  5. In a non-stick pan heat ghee over medium flame. Once the ghee is hot, lower the flame and add cloves, bay leaves, cinnamon stick, cardamom and peppercorns. Cook them until peppercorns clutter.
  6. Now, add sugar and water in it and stir well. Add the half cooked rice and give it a stir.
  7. Add all the dry fruits in it and stir well again.
  8. Combine cooked rice in it along with saffron liquid and mix it carefully.
  9. Cover the pan and let it cook for an hour. When cooked, mix it gently.
  10. Serve modur pulao warmly to satisfy your sweet tooth.
