Samak Ki Tikki – Navratri Special
Introduction -:
Samak, Mordhan or Barnyard millet, is one of my most favourite millets to cook with. With it being a good source of protein, and relatively low in calories, this tikki features quite often in my regular dinner menus as well. Crisp and delicious patties made with barnyarn millet, potato and spices (food for fasting). Most of the people in North India fast during Navratri and eat only satvik food as grains and pulses are prohibited during fasting this sama & potato tikki is a favourite fasting food of my family.
Ingredients -:
Servings-6 | |
1/2 cup sama rice | 1 cup water |
1/2 cup finely chopped carrots & green beans | 4 medium size boiled potatoes |
1 tsp pepper powder [kali mirchi] | Sendha namak to taste |
2 tsp chopped green chillies | 1.5 tsp grated ginger |
3 tbsp ghee/cooking oil |
Directions -:
- Add sama and water in the pressure cooker and cook for 3 whistles on medium heat.
- Heat ghee in a vessel. Saute the carrots and beans on a high flame. Do not overcook the vegetables, should retain the crunch.
- Take cooked chawal into a bowl. Add rest of the ingredients and mash well.
- Grease your palms and make patties of same size from the mixture.
- Heat the oil in a pan for deep frying on medium heat.
- Once oil is hot fry few cutlets at a time. Once browned and cooked from one side, flip them and fry the other side.
- Drain excess oil on a paper napkin and serve hot with vrat ki chutney.
