Tavsali: Cucumber cake from Goa.

History:

Cucumber is termed as “Tavshem” in Konkan, so Tavsali is basically a cake made from cucumber. It is a dish often served as dessert on many occasions like Christmas parties, New Year’s Eve, etc. The Speciality of this cake is that it is an eggless steamed cake not baked. This cake has a dominating taste of cucumber with very mild sweetness so you don’t have to worry about the calories as we are using jaggery as a sweetener which is having enough health benefits and is very low in calories.

Ingredients :

2 cucumbers1 cup semolina
1/2 cup cashew (chopped)1/2 cup almonds (chopped)
1 cup coconut grated1 tsp coconut oil for greasing
1.5 cup powdered jaggery.1/2 tsp cardamom powder.

Method :

  1. Dry roast semolina in a pan and keep aside.
  2. Grate the cucumber if a lot of juice comes out, keep that juice aside for later use in batter.
  3. In a bowl mix grated coconut with rava, coconut, and jaggery.
  4. Now add cardamom powder, dry fruits.
  5. If a mixture is to dry add some juice of cucumber.
  6. Mix well.
  7. Boil some water in a steamer or in a pressure cooker.
  8. Grease some pan with oil in which you want to make a cake.
  9. Pour the batter into the pan and place the pan in the steamer or in a pressure cooker.(if you are using a pressure cooker remove its weight ).
  10. Steam it for around half an hour.
  11. Once done check if the knife inserts in it and comes out clean without any mixture on it.
  12. Demould the cake on a plate.
  13. Slice it and serve it cool.

Cucumber is very low in calories and is loaded with a good amount of water that helps you keep hydrated for long hours.
