Tiramisu

History of Tiramisu :

Tiramisu appears to have been invented in the 1960s or 1970s, but where and when exactly is unclear. This dish is unknown in cookbooks before the 1960s. Tiramisu is the world’s most famous Italian dessert and it is considered a modern dessert par “excellence”. Historical records state that Tiramisu originated in Treviso in 1800. The dish is claimed to have first been created by a confectioner named Roberto Linguanotto, owner of “Le Beccherie”. Le Beccherie is supposed to have invented it on 24 December 1969.

Ingredients :

1 cup espresso 1/4 unsweetened cocoa powder
2 tsp vanilla extract 6 large eggs yolks
1 cup granulated sugar1 1/5 cup mascarpone
35 lady fingers1 3/5 heavy whipping cream
Half cup of dark rum for the coffee mixtureHalf cup of dark rum for mascarpone filling
Orange liqueur

Instructions :

Step 1 – In a bowl combine the espresso and dark rum. Add some orange liqueur to the bowl for some extra depth of flavor.

Step 2 – Transfer the mascarpone cheese to a large bowl then pour in the dark rum, mix to combine, and set aside.

Step 3 – In a medium saucepan, whisk together egg yolks and sugar until well blended. Wait for 1 minute, remove from heat.

Step 4 – Pour the egg yolks into the mascarpone mixture and mix until well combined. Place in the fridge to hang out a bit while you work.

Step 5 – In a separate bowl, beat cream with vanilla until stiff peaks form. Fold the whipped cream into your mascarpone mixture then set aside.

Step 6 – Time to dip arrange the soaked ladyfingers in the bottom of a 9-inch square baking dish.

Step 7 – Add half of the mascarpone filling over the bottom layer of ladyfingers and smooth out with an offset spatula. Then continue dipping and arranging the second layer of lady fingers.

Step 8 – Repeat layers and sprinkle with cocoa. Cover and refrigerate 4 to 6 hours, until set.
