Zucchini Kofta Curry
Origin :
Zucchini is a vegetable known as courgettes in french and zucchini in Italian. It looks very similar to cucumber but the only difference is that it is served cooked. This vegetable can be used in a variety of forms like soups, pickles, etc. Today we are sharing here a very interesting recipe for zucchini i.e zucchini kofta. Kofta is a type of dish that makes every boring vegetable somewhat interesting to eat, koftas itself originated from Persia where Persians used to make minced meat koftas and were introduced in India by Mughals somewhat around the 16th century.
This recipe is very similar to lauki (Bottle gourd ) kofta recipe, but due to the various health benefits of Zucchini, this recipe is a must-try.
Ingredients :
For Kofta : | |
2 cups Zucchini (grated) | 1/2 cup Besan (chickpea flour) |
1 onion (finely chopped) | 1 tsp ginger and garlic (finely chopped) |
salt as per taste | 1 tsp carom seeds |
1/2 tsp cumin seeds | 1 small green chilly (finely chopped) |
1/2 cup coriander leaves( finely chopped) | 1 tsp garam masala |
oil for deep frying | 1 tsp chaat masala |
For the curry. | |
1 onion (finely chopped ) | tomatoes 2 ( pureed) |
2 tsp ginger and garlic paste | 3/4 cup yogurt (whisked) |
1 tsp cumin seeds | 1 bay leaf |
1/2 tsp garam masala | 1/2 tsp coriander powder |
1 tsp turmeric powder | 1 tsp red chili powder |
salt to taste | 1 tsp kastoori methi |
oil | water |
1/2 cup coriander (finely chopped) |
Method for the kofta :
- Add grated zucchini and onion with two tsp of salt in a bowl .
- Keep aside for 10 mins.
- Now squeeze the mixture with both the hands so that all water from the mixture squeeze out completely.
- Keep the liquid aside for making curry.
- Take another bowl & add zucchini mixture with all the other ingredients mentioned above for making koftas.
- Check the consistency of the mixture if it is too dry then sprinkle some water(not too much).
- Start making small balls out of the mixture and keep aside for frying.
- Heat oil in kadhai and on medium flame start frying the koftas so that they are cooked completely from inside as well.
- Fry the koftas till golden brown.
- Take them out on a kitchne towel.
Method for making kofta curry:
- Take a pan & add oil and when the oil is hot add cumin seeds ,bay leaf and saute.
- In that oil add onion and saute well till they are light brown in colour.
- Add ginger garlic paste & tomato puree.
- Put all powdered spices and salt.
- slow down the flame & add yogurt ,stir well.
- Now keep stiring the mixture until oil starts floating on the top.
- Put kastoori methi and garam masala.
- Add the water that is left from zucchini and onion mixture.
- Check the consistency add some more water if required.
Now add koftas(add koftas only at the time of serving only so that koftas will remain crispy and crunchy) in the curry give it a boil and switch off the flame, garnish with coriander leaves and your yummy kofta curry is ready. Serve it with Chapati or Nan.
